During the coronavirus lockdown, Michelle Murderere started cooking and selling traditional African and Caribbean food from her home and decided that she wanted to learn how to cook traditional English dishes so that she can open her own restaurant in the future.
Michelle, who is studying for the Level 2 diploma in professional cookery, said: “I’d love to open a restaurant serving all different types of food so that groups of friends or family can sit and enjoy eating together, whatever their taste in food.
“I’m learning new skills every day – such as baking sponges and pastries and how to debone and prepare a fish – and we also cover the history of cookery, where food comes from and why a lot of cookery terms are in French, it’s really interesting.
“The tutor explains everything well and clarifies anything we’re not sure about and I’ve gained confidence and made new friends since I came here – if you’ve got your mind set on something, give it a go and don’t just limit yourself to one thing!”
