17-year-old O’Shea Rattu is studying for the Level 2 diploma in professional cookery after completing the Level 1 Introduction to the Hospitality Industry diploma last year.
O’Shea said: “I like preparing and cooking lots of different things and want to be a chef and open my own restaurant in the future.
“I’m learning what it’s like to work in a professional kitchen and it’s good experience preparing food for others
“The tutor demonstrates things – such as preparing fish or different cuts of meat – before we try it ourselves which is useful, and I’ve learnt new knife skills and the correct way to prepare vegetables.
“I’ve become more confident and can work on my own better and have learnt far more here than at school.”
